Chicken Bukhari Rice Recipe | How to make Bukhari Rice?
It is an aromatic and flavorful rice dish. This recipe is popular in the middle eastern countries. It has a wonderful fragrance and a lovely color (due to the shredded carrots). This dish is best enjoyed with salad, yoghurt etc.
Chicken Bukhari Rice
Ingredients
- Basmati Rice - 2.5 cups (soaked)
- Grated Carrot - 2 carrots
- Pepper Corns - 1 tsp
- Cinnamon Sticks - 2"
- Onion - 1 (big, sliced)
- Tomato Puree - 2 cups
- Tomato Paste - 2 tbsp
- Cumin Powder - 1 tsp
- Salt
- Oil
- Chicken - 1 kg (with skin)
Instructions
- Heat oil in a vessel, add onion and cook till golden brown. Add carrots and cook till it softens. Add tomato puree and paste, mix well. Add cumin powder, salt and combine together.
- Add the chicken to the tomato mixture and combine well. Add enough hot water till the chicken is immersed, bring to a boil, cover and cook on low heat.
- Cook till chicken is done, remove the chicken and keep it aside.
- Check salt in the stock, add rice and cook covered until the rice is cooked.
- Marinate the chicken if needed. Melt butter or oil in a pan and grill the chicken until the skin has browned. Serve it along with rice.
