Chicken Kothu Parotta

Chicken Kothu Parotta is a popular dish across the southern parts of India and Sri Lanka. It features parottas, crushed and sautéed in ghee until crisp, then mixed with a rich chicken or meat gravy. Many home cooks prepare it using leftover gravy and parottas.

Ingredients

  • Parottas - as needed
  • Onion - 3 (sliced)
  • Ginger Garlic Paste - 1 tsp
  • Green Chillies - 3 (chopped)
  • Tomato - 2 (big, chopped)
  • Coriander Leaves
  • Turmeric Powder - 1/2 tsp
  • Kashmiri Chilli Powder - 2 tsp
  • Pepper Powder - 1 tsp
  • Curry Masala Powder - 1 1/2 tsp
  • Garam Masala Powder - 1 tsp
  • Eggs - 3
  • Fried and Shredded Chicken - as needed
  • Oil & Ghee

Instructions

  1. Saute the crushed parottas in ghee until crisp and golden brown color.
  2. Heat oil, saute onion, ginger garlic paste until golden brown. Add tomatoes and cook till soft and mushy. Add coriander leaves and mix well.
  3. Add spice powders, salt and cook till raw smell fades. Add beaten eggs and scramble it, once the egg is half cooked, add the toasted parottas, shredded chicken and mix well. Garnish with green chillies, coriander leaves and serve hot.
