Kuska Rice is a primary South Asian rice dish mainly made with spices, basmati rice and ghee. It is a quick and easily prepared rice with limited spices and light seasoning. It is served with curry, kuruma or raitha.

Ingredients
Basmati Rice - 2 cups (soaked & rice)
Cloves - 3
Star Anise - 1
Cardamom - 3
Cinnamon Stick - 1"
Bay Leaf - 2
Onion - 3 (sliced)
Ginger Garlic Paste - 2 tsp
Green Chilli - 2 (slit)
Tomatoes - 2 (sliced)
Red Chilli Powder - 2 tsp
Garam Masala Powder - 1 tsp
Curd - 1/2 cup
Mint Leaves
Coriander Leaves
Salt
Ghee
Instructions
- Heat ghee in a pot, saute whole spices, bay leaf for a minute. Add onion, ginger garlic paste, green chilli, saute till onions are completely cooked.
- Add tomatoes and cook till mushy.
- Add all spice powders, salt, mint leaves, coriander leaves, curd and mix well. Add enough water to cook the rice and bring to a boil. Add the rice, mix well and cook until done.
