Chicken Upma | Rava Chicken Upma | Wheat Rava Upma | Chicken Upma Biryani

Rava Chicken Upma
Ingredients
- Roasted Broken Wheat Semolina - 500g (1 packet)
- Chicken - 3/4 kg (cut into small pieces)
- Cinnamon Stick - 1 (big piece)
- Cardamom - 2
- Clove - 2
- Bay Leaf - 1
- Onion - 3 (big, sliced)
- Ginger Garlic Green Chilli Paste - 2 tbsp
- Tomato - 2 ( big)
- Turmeric Powder - 1/4 tsp
- Red Chilli Powder - 1 tsp
- Fennel Powder - 3 tsp
- Coriander Powder - 2 tsp
- Garam Masala Powder - 1 tsp
- Salt
- Coriander Leaves
- Coconut Oil - 4 tbsp
- Ghee - 2 tbsp
Instructions
- Heat oil and ghee in a vessel, add onion, whole spices, ginger garlic green chilli paste and saute until onion turns brown in colour. Add tomatoes and cook until mushy.
- Add spice powders, salt and mix till raw smell fades. Add coriander leaves and mix. Add chicken and mix well until its coated in the masala mix. Add 2 cups of hot boiling water.
- Adjust salt, cover and cook until chicken is 90% done.
- Add 4 to 4.5 cups of hot boiling water, adjust salt, add 2 tbsp of ghee and bring to a boil. Add roasted semolina, mix.
- Cover and cook for 10 minutes on low flame or till semolina absorbs the water completely. Garnish with coriander leaves and serve.
