Ingredients

  • Roasted Broken Wheat Semolina - 500g (1 packet)
  • Chicken - 3/4 kg (cut into small pieces)
  • Cinnamon Stick - 1 (big piece)
  • Cardamom - 2
  • Clove - 2
  • Bay Leaf - 1
  • Onion - 3 (big, sliced)
  • Ginger Garlic Green Chilli Paste - 2 tbsp
  • Tomato - 2 ( big)
  • Turmeric Powder - 1/4 tsp
  • Red Chilli Powder - 1 tsp
  • Fennel Powder - 3 tsp
  • Coriander Powder - 2 tsp
  • Garam Masala Powder - 1 tsp
  • Salt
  • Coriander Leaves
  • Coconut Oil - 4 tbsp
  • Ghee - 2 tbsp

Instructions

  1. Heat oil and ghee in a vessel, add onion, whole spices, ginger garlic green chilli paste and saute until onion turns brown in colour. Add tomatoes and cook until mushy.
  2. Add spice powders, salt and mix till raw smell fades. Add coriander leaves and mix. Add chicken and mix well until its coated in the masala mix. Add 2 cups of hot boiling water.
  3. Adjust salt, cover and cook until chicken is 90% done.
  4. Add 4 to 4.5 cups of hot boiling water, adjust salt, add 2 tbsp of ghee and bring to a boil. Add roasted semolina, mix.
  5. Cover and cook for 10 minutes on low flame or till semolina absorbs the water completely. Garnish with coriander leaves and serve.
